My Favourite 30 Minute Meals

I LOVE food and trying new recipes, but I regularly rotate my favourite meals to keep things simple - especially when I’m really busy. My meals are always fast, easy to make and tasty - you definitely won’t find me slaving away in the kitchen for hours! To give you a little inspiration, I thought I would share some of my favourites that I have regularly.

Teriyaki Salmon

One of my favourites that never gets old. I try to have salmon multiple times per week as its rich with omega 3, paired with a delicious teriyaki sauce makes it taste like a real treat!

INGREDIENTS for TWO

  • Salmon fillet x 2

  • 2 tbsp soy sauce

  • 1 tbsp honey

  • 2 cloves of garlic

  • 1 tbsp grated ginger

  • Vegetables - I used onion, carrot, mushroom, broccoli

  • 250g Basmati rice

  • Olive oil for cooking

METHOD

Mix the soy sauce, ginger, garlic and honey over the salmon whilst you chop the vegetables. Grab a large pan and add a dash of olive oil on a medium heat. Add the salmon skin side down for 3-4 minutes, then flip and cook for the same time on the other side. Once cooked, take out of the pan and leave to sit. Add the vegetables and cook for a few minutes (I like mine quite crunchy). Whilst this is cooking, throw some rice in the microwave and cook for 2 minutes.

Plate up the rice, vegetables and salmon and serve with a squeeze of lime - delicious!


Prawn Pasta

Another one of our regular weekly dishes. I think Italian might be my favourite cuisine - I absolutely love pasta and will continue to eat it whatever phase I’m in!

INGREDIENTS for TWO

  • 250g prawns

  • 200g spaghetti (or any pasta of choice)

  • 2 cloves of garlic

  • 1 tsp chilli flakes

  • 1 lemon

  • Olive oil

  • Rocket to serve

METHOD

Cook the pasta in a large pan of salted boiling water. Heat the oil in the pan and add the garlic, chilli and a little salt. Cook for 2 minutes, then add the prawns until cooked or pink in colour.

Once the pasta is cooked, drain and add to the pan with the juice of 1 lemon. Mix together and stir in the rocket and a drizzle of olive oil to serve. Yum!

Beef Tacos

I love taco Tuesday, so we always try to recreate this at home. It tastes just as good but in the comfort of your own home.

INGREDIENTS for TWO

Filling:

  • 250g beef mince

  • 1 red onion

  • 2 peppers

  • 2 cloves of garlic

  • Olive oil for cooking

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tbsp tomato puree

To serve:

  • 6 taco wraps (I like mix of hard and soft)

  • Shredded lettuce

  • Smashed avocado, squeeze of lime

  • Sweetcorn

  • Cheese (optional)

METHOD

Heat olive oil in a frying pan and chop the onion and pepper into long strips. Throw these into the pan and once soft, add the garlic, paprika, cumin and tomato puree. Add the mince and cook until brown. I like to keep this on a medium heat to get the mince and veg nice and charred.

While the mince is cooking, smash some avocado in a separate bowl with a squeeze of lime, salt and pepper. Heat the wraps in the microwave for 20-30 seconds and you are good to go!
